Hey guys! Although these are gluten-free and such, I am aware that that doesn’t make them automatically healthy (i wish!). There is still quite a bit of butter and sugar. I’m hoping to do an experiment day where I can try different things to make this recipe a healthier version ๐
Ingredients:
- 1 cup of butter
- 3/4 cup of white sugar
- 3/4 cup of brown sugar
- 2 eggs
- 1 tsp. of vanilla
- 2 1/4 cup of gluten-free all purpose flour
- 2 tsp. of xanthan gum
- 1 tsp. of baking soda
- 1 tsp. of salt
- 12 oz. of butterscotch chips (or any kind of chips you may like!)
Begin by mixing in a bowl the butter, eggs, and vanilla…
…make sure to mix it well!
Then add the dry ingredients one by one, while mixing in between each one. Starting with sugar, brown sugar, baking soda, xanthan gum, salt, and then flour.
Once you’ve mixed all the dry ingredients in, time for the chips! I used butterscotch chips, but you’re more than welcome to put whatever pleases you! Chocolate chips, white chocolate chips, and more! ๐
Then grease a baking sheet, roll the dough in to small 1 in balls. Beware, these cookies to expand! So don’t make them too big! ๐ Then place in your preheated oven at 350F and bake for about 8-10 mins! **Do not over cook! when they are slightly browned on the edges, take them out!**
and… voilร ! Soooo yummy! And your house will smell delicious!
