Weekend Update: Food, Friends, and Family!

I had such an amazing weekend! It was so busy and I was out and about so much that blogging was just not happening! So here is a lovely bulk of everything! First off, one of my greatest friends came to visit from Edmonton! We hadn’t seen each other in a year 😦 It was so amazing to catch up with her and just relax and enjoy Vancouver! We met a year ago in Quebec City at Laval University and I’m so grateful to call her a friend. She’s honestly one of the greatest people out there, she’s always motivating me and is just all around an amazing person!


We had a lovely walk around the seawall, and then ate some food, sangria and well.. we had ice cream haha. It was well deserved after our 10 km walk around the seawall! Honestly, I didn’t feel guilty one bit πŸ™‚


Then the following day (Saturday), Me, my mom, and sisters went to a synagogue to celebrate my Uncle’s first aliyah! After 4 years of studying, my Uncle has converted to Judaism and I could not be happier for him. He has found spiritual fulfillment and that is so great.


Β Not only was it a time for our family to celebrate, it was great to see my cousin who was home visiting from Israel! She’s been living there for a couple of years now and was home for a visit. Β It was a blessed day with so much joy and love!


This same weekend we went out to Maple Ridge! I love being farther out in the country. It’s when I get to see huge yards, blast the country music and admire all the horses! Anyways, my step-dad was working out there so me, my mom, and sisters went to pick him up and make a drive out of it. While waiting for my step-dad to be done, we found an apple tree! Which was great, so we picked a bunch of apples off of it for a snack and maybe some apple sauce? Either way, they were delicious!

4-Ingredient Healthy Pancakes

Hey guys!

I have seen this recipe going around quite a bit, so I wanted to give it a try! Β At first I did the 3 ingredient pancakes, but then I found adding rolled oats really helped keep the pancakes together and turn out much nicer.



  • 2 eggs
  • 1 ripe banana
  • 1 cup of Bob’s rolled oats
  • 1 teaspoon of vanilla (optional)

Blend all the ingredients together (Works great in a bullet!) Then simply take about 1/4 cup of the mix into a non-stick pan and cook till either side is brown! Honestly the easier recipe ever and healthier than heavy pancakes!


I added some of my fav blueberry syrup, which honestly, I could probably make! I think I will next time for sure πŸ™‚




Update: Food, Fitness, and School!

Hey Guys!

Sorry for being MIA, it’s been a busy few days! I had the last of my finals on monday, and it feels sooooo good to be done! Finals are always stressful time. It’s really important to be able to take a minute for yourself to relieve some stress. For me, that was going and playing some soccer with my little sister.


Now, I am not by any means great at soccer. However, my sister, who is 10, has been doing soccer for the last year and we always have fun tossing around the ball and getting our sweat on! Believe me, it can be a sweat. With that being said, my food intake hasn’t been too bad! I have a massive salad for lunch the other day, but other than that everything has been snack foods because I was on the go so much. This meant a handful of nuts, tuna and crackers, and my typical oatmeal! Although, I can’t lie… I REALLY wanted to grab a frapp from starbucks or a bag of chips BUT I didn’t πŸ™‚ I haven’t incorporated too much fitness this week, which is something that I will be changing. I wanted to do some research and figure out what would work best for me and what I could completely commit to. I also want to make sure that it’s something I feel is rewarding to me.

Gluten-Free/Wheat-free Butterscotch Cookies

Hey guys! Although these are gluten-free and such, I am aware that that doesn’t make them automatically healthy (i wish!). There is still quite a bit of butter and sugar. I’m hoping to do an experiment day where I can try different things to make this recipe a healthier version πŸ™‚


  • 1 cup of butter
  • 3/4 cup of white sugar
  • 3/4 cup of brown sugar
  • 2 eggs
  • 1 tsp. of vanilla
  • 2 1/4 cup of gluten-free all purpose flour
  • 2 tsp. of xanthan gum
  • 1 tsp. of baking soda
  • 1 tsp. of salt
  • 12 oz. of butterscotch chips (or any kind of chips you may like!)


Begin by mixing in a bowl the butter, eggs, and vanilla…


…make sure to mix it well!


Then add the dry ingredients one by one, while mixing in between each one. Starting with sugar, brown sugar, baking soda, xanthan gum, salt, and then flour.


Once you’ve mixed all the dry ingredients in, time for the chips! I used butterscotch chips, but you’re more than welcome to put whatever pleases you! Chocolate chips, white chocolate chips, and more! πŸ™‚


Then grease a baking sheet, roll the dough in to small 1 in balls. Beware, these cookies to expand! So don’t make them too big! πŸ™‚ Then place in your preheated oven at 350F and bake for about 8-10 mins! **Do not over cook! when they are slightly browned on the edges, take them out!**


and… voilΓ ! Soooo yummy! And your house will smell delicious!


Food Journal: Day 3

Today was a catchup day around the house. I spent most of the time cleaning and such (which I enjoy doing sometimes!). I woke up this morning, had a full glass of water and had some tea!


I didn’t blog about my dinner yesterday because I posted a little early, however it was delicious! I had garlic and herb Basa fish, perogies, and some salad! Here’s a little photo to start your salivary glands πŸ™‚


Now on to today! I ate oatmeal again, which was delicious. I’m a bit obsessed! Then because I got really busy with cleaning and then grocery shopping I didn’t have time to do anything exciting for lunch. Β Instead I opted for my fav, tuna and a few crackers πŸ™‚ For dinner, I really wanted to try something that I love and turn it in to a healthier version. I made healthy Taco bowls! yumm!

First off, I started by taking whole wheat tortillas and baking them on a cupcake mold turned upside down. After I baked them in the over for about 10 mins at 375F. They were a perfect alternative to deep frying them, which yes… I have been guilty of! (not a proud moment),


Then I cooked up some extra lean chicken and added my own taco seasoning. In the seasoning I put Cumin, Chili powder, Onion powder, garlic powder, and some sea salt. The seasoning was literally the exact same, but without all the extra crap in it!Β 


I am so lucky my step-dad has a green thumb. He built a garden on our property a few years back and it has been such a blessing! So I went down to the garden, got some tomatoes and lettuce for my meal. I also picked up some hot peppers and all the ingredients for my salsa! It was so light and fresh, perfect for summer!


Then I put everything together and voila! A delicious meal for one πŸ™‚ Actually I made enough for my whole family and a few of my sisters friends so… more like 10! Either way, it was quick, easy, and healthy!


Fit Friday: Food Journal, Hiking, and a bit of beauty!

Hey guys! Ahh first off, I did my nails today and LOVELOVELOVE them! I use to spend so much money on my nails, but being a student it just doesn’t make sense! I found a great alternative way to have cute nails and save money! First off I used some clear fake nails, glued them on, then painted my nails with my new fav Essie color: Blanc! They look exactly the same as when I got them done at the salon.Β 

Secondly, I have to give a shout out to one of my best friends, Aman! One of my major supporters in all my endeavours. She’s always there when I need her and want to vent! We went on such a beautiful hike today! We spent a couple hours as lynn headwaters in North Van, which was a treat! It’s such a beautiful scenery, it didn’t even feel like a workout (although I was sweating :P)


And now on to food, eating well is much easier when you have people around you on the same page! My friend, Aman, just finished a juice cleanse so everything was kept pretty light! I had oatmeal this morning with blueberries and a bit of coconut sugar & cinnamon. Then I made smoothies with Aman. We made black cherry with chocolate protein smoothies (delicious!) I’ll have to post the recipe on another post some time πŸ™‚ this one has gotten pretty long!Β

Food Journal: Day 1

A successful day of food journaling! Even though I did not put calories in my journal when I recorded what I ate, it still made me aware of what I was putting in my mouth… especially since i’d have to post about it!11846049_10153168086298473_2024996874_nI don’t have photos of everything I ate, however I did photograph my dinner! Pasta is huge in my house. My mom makes it more than what we probably should! It’s economical and everyone loves it. Although it wasn’t the best meal(pfft.. who says!) I still ate the pasta in moderation! Moderation: Another thing I’m learning! There have been waaaay too many times I’ve restricted myself, which lead to me not following through with my weightless journey!
